how to make masala dosa at home

masala dosa doesnot need any introduction because being south indian cuisine it is famous all over the country. masala dosa is the favourite food of many people. it can be enjoyed at any time of the day.

masala dosa is made of rice and split black gram skinless. many people complain that home made dosa doesnot become crisp but once try the given recipe of dosa it will definitely become crisp. lets see the recipe of masala dosa .




for dosa

  • rice (slightly thick) – 3 cup
  • split black gram skinless / dhuli urad dal  – 1 cup
  • salt – to taste
  • curd – 1 tablespoon
  • sooji / semolina – 2 tablespoon
  • fenugreek seeds / meithi daana – 1/2 teaspoon
  • oil – for frying dosa

for potato masala

  • boiled and mashed potato – 2 cup
  • tomato (finely chopped) – 1/2 cup
  • curry leaves – 6 – 8
  • green chilli (chopped) – 1/2 teaspoon
  • turmeric powder – 1/2 teaspoon
  • mustard seeds – 1/4 teaspoon
  • asafoetida (heeng) – a pinch
  • salt to taste
  • oil – 1 tablespoon


Masala Dosa Recipe

1. to make masala dosa, first we will prepare the batter. for dosa batter wash the rice properly with water and then soak it for 7-8 hours. similarly wash urad dal with water and soak it separately for 7-8 hours. add fenugreek seeds with urad dal while soaking.

2. now drain the rice and grind it in the mixer till it becomes smooth, little water can be added while grinding if required.

3. then drain and grind urad dal in the mixer till it becomes smooth paste, add little water while grinding if required.

4. mix the paste of urad dal with the grind rice. (consistency of the batter should not be too thick or thin)

5. add salt, semolina, curd in the batter and mix well.

6. now cover the container containing batter and keep it for fermentation for 7-8 hours. (batter can be kept for sometime in sunlight also for fermentation)

7. batter has been fermented.

8. mix the batter properly.

9. check the consistency but do not add water in the batter.

10. i have used the iron griddle / tawa to make dosa, heat the tawa on high flame then take a cotton cloth, dip it in the bowl containing water and few drops of oil and wipe the griddle. now pour some batter at the centre of the griddle.

11. spread it with bowl / spoon into a circle.

12. now take 1 teaspoon of oil and pour it on the sides and at the centre of dosa.

13. now on medium flame fry dosa it becomes golden and crisp, spread some potato masala at the centre. (do not fry dosa from both sides, it should be fried only from one side)

14. fold it to make a roll, masala dosa is ready, serve it with sambhar and coconut chatni.

15. if you want to make plain dosa then fold the dosa without potato masala.

16. to make potato masala for dosa, heat the oil in a pan, then on medium flame add heeng, mustard seeds, curry leaves in it when seeds crackle add green chilli and tomato and fry till tomatoes soften.

17. now add turmeric powder, mashed potatoes, salt and mix well then fry it on low flame for 3-4 minutes.

18. potato masala is ready for masala dosa.
